Branzino with Orzo Recipe

Branzino with Orzo Recipe

This healthy orzo recipe not only tastes great, but will provide you with 20% of the RDA of vitamins A and C.

Branzino with Orzo Recipe

 

Serves 8

1 lb whole wheat orzo, dry
60g Kalamata olives, dived
2.5 cups cherry tomatoes, halved
3 cups green beans, cut on bias and blanched
4 oz feta cheese, crumbled
24 oz branzino
1/2 tsp salt

Directions


Cook pasta until al dente. Remove from heat and strain.

Fold olives, tomatoes, green beans and feta cheese into pasta. Salt to taste.

Season branzino with salt and sear skin side down over medium heat until browned.  Flip and cook for another minute until just cooked through.

Assemble a bed of pasta on plate. Place branzino on top of pasta bed.
