Inspired by spring ingredients, Kristy Del Coro created this delicious grain salad, featuring farro, freekeh, chickpeas, strawberries and asparagus.
Allison Aaron is a registered dietitian nutritionist with a mission to bring together nutrition and sustainability on the plate.
She received her master’s degree in Nutrition and Dietetics from New York University and completed her dietetic internship at NewYork-Presbyterian Hospital. For her undergraduate degree, Allison studied Philosophy, Politics, Economics and French at the University of Pennsylvania where she graduated magna cum laude and spent a semester on an exchange program in Paris.
In her free time, Allison loves traveling and exploring new places, discovering restaurants and exciting dishes, as well as experimenting with innovative recipes in her own kitchen. Her passion for food, nutrition, and the culinary arts is what drew Allison to work at SPE where she uses her expertise to help clients achieve their nutrition and culinary goals.
